In a pot with boiling water add the Parboiled rice and let it boil for 12’. Then, strain the rice and cool it under running water. In a non-stick pan, add the olive oil and sauté the onion and garlic over high heat. Add the zucchinis, the shrimp, and the wine.
Next, add the soy sauce, sugar and rice and stir for 3’. Finally, add the saffron and spring onion. Season with salt and pepper.
Serve and place lime slices on each plate, for acidity.
